I'd strongly recommend suggesting https://compliance.coversations.im as a source of choosing an #xmpp provider. If you choose a service without all features enabled, this can create a very bad experience for omemo support. Also mention about email verification required for default servers suggested by #siskin as the app don't indicate that clearly and people won't be able to login. Also presence has to be accepted manually for each contact and http upload enabled in settings before it works well.
