I'd strongly recommend suggesting https://compliance.coversations.im as a source of choosing an #xmpp provider. If you choose a service without all features enabled, this can create a very bad experience for omemo support. Also mention about email verification required for default servers suggested by #siskin as the app don't indicate that clearly and people won't be able to login. Also presence has to be accepted manually for each contact and http upload enabled in settings before it works well.

The whole #Threads thing seems to for some reason bring a lot of misinformation about #XMPP with it. Google didn't kill it and it's perfectly possible to build messengers for mobile devices with it. Many people commenting on XMPP recently haven't done their research it seems.
